Lemon Roasted Potatoes
zesty, savory, fluffy with crispy edges
Ingredients:
• russet potatoes
• lemons and/or lemon juice powder
• stock or broth
• garlic
• olive oil
• dried oregano
• black pepper
Oven Settings:
390°F
45 minutes (toss halfway)
Steps:
- Wash, peel, then cut potatoes into wedges.
- Add and mix the rest of the ingredients into a deep roasting pan. Add in the potatoes and adjust liquid ratio until the potatoes are mostly covered.
- Preheat the oven to 390 degrees. Put the pan in the oven for 20 minutes.
- Toss the potatoes, then bake for another 25 minutes.
- Transfer potatoes to a shallow baking tray, then drizzle and toss the potatoes in the oil from the roasting pan. Add enough so the potatoes do not stick to the tray.
- Bake the potatoes for another 35 minutes.
- While the potatoes are baking, transfer the rest of the liquid to a saucepan and further reduce the sauce.
- Top the potatoes with the reduced sauce and fresh herbs.
⭐️ Chef Notes ⭐️
- Recommend using smaller sized russet potatoes for the best texture. Russets will be fluffy due to the lower water content. Using other varieties such as red potatoes have less starch content and are more “waxy” and will not produce the same result.
