Chicken Adobo

sweet and vinegary broiled chicken

Use a pan large enough to fill without stacking. Caramelize onions and deglaze with water. Add garlic and bay leaves then push to one side. Add oil and turn up to medium high. Add chicken skin side down and sear for 1-2 minutes. Once browned, flip and add the rest of the marinade with water so that the chicken is 3/4 submerged. Cover and simmer on low heat for 30 minutes or until fork tender. To thicken sauce, remove the lid and reduce over high heat. Garnish with chopped green onion and/or cilantro and serve with rice. 

Ingredients:
• 6 bone+ skin chicken thighs
• ¼ cup black soy sauce
• ⅓ apple cider vinegar
• 1 tsp black pepper
• 6 cloves garlic (rough chop)
• 1 medium onion (julienne)
• bay leaves
• cilantro or green onion (optional)

Marinade:
Rest for 20 minutes

• black soy sauce
• apple cider vinegar
• black pepper
